If you do decide to go to war against other islamic factions, they are usually isolated from their allies enough to as to make it a 1 on 1 fight. Assuming that you are playing vanilla, you are safely snuggled away on the corners of the maps, with plenty of rebel cities to conquer. In the middle east, you also have alot more space to manuever. You'll often see infantry rout with one cav charge after a solid duration of missile harassment. Soften up enemy heavy cav with a few missile cav and then charge them with your general. The ability for imams to set a jihad lets you save a ton on upkeep and recruit a bunch of jihadi-mercs to bolster your armies.
